The answer depends on personal taste and availability, but a few types of mushrooms are commonly used for this dish.

One popular option is the cremini mushroom, also known as the baby Bella mushroom. These mushrooms have a meaty texture and a deep, earthy flavour that pairs well with the soup’s creaminess. Another good choice is the white button mushroom, which has a mild taste and a firm texture. Shiitake mushrooms are also a favourite among many cooks, as they have a distinctive smoky flavour and a meaty texture that can add depth to the soup.

Preparation time: 5 minutes

Cooking Time: 40 minutes

Total Time: 45 minutes

Servings: 4

4 tbsp. butter

1 lb. white button mushrooms, sliced

1 yellow onion, diced

4 garlic cloves, minced

¼ cup red wine

5 tbsp. all-purpose flour

3 cups vegetable stock

1 cup heavy cream

1 tbsp. Italian seasoning

Black Pepper to taste

salt to taste

Croutons, for garnishing

  1. Add butter to a Dutch oven over medium heat. Once the butter melts, add onion and sauté for 3 to 4 minutes.
  2. Add garlic and sauté for another minute until fragrant.
  3. Add mushrooms, salt, and Italian seasoning. Sauté for 10 to 12 minutes while stirring intermittently until mushrooms release all the liquid.
  4. Add red wine, increase the heat to high and stir for 3 to 4 minutes or until the wine disappears and the mushrooms shimmer.
  5. Reduce the heat back to medium, dust flour on top and toast it for 1 to 2 minutes while stirring continually. Pour one cup of hot stock into the Dutch oven and mix it using a wooden spoon.
  6. Pour the second cup of stock into the mixture and stir it well to combine. Then, add the third cup of stock and gently whisk it as you bring it to a simmer. As it simmers, the mixture will thicken.
  7. Add cream and stir until thoroughly combined and season with black pepper and salt to taste.
  8. Once the soup is ready, ladle it in bowls, garnish with Croutons and serve with crusty bread.
